I love to repurpose leftovers in new and novel ways. This quick salad is tabouli inspired. I make single servings, but you could whip up a big batch for dinner or company. Here I have paired it with Corvina en Papillote and some toasty Brussels (recipe here).
Place leftover Oven Baked Cauli Rice in a mixing bowl. Drizzle generously with olive oil. Add cubes of watermelon radish and toss in chopped fresh mint. Sprinkle with Maldon sea salt flakes. Toss and serve.
