After I got my mom hooked on parchment paper, she came up with the idea for this one dish wonder.  She often makes pork for my boys when we go to her house for dinner, and pork is just not my best friend…so she started making me my own special one dish meal..which has  become a new favorite of mine.

Here’s the Scoop

If you follow me on instagram (and please do) you will see my veggie mash scoops often.  Since I store leftover cauli mash in a 1.5 pint tall mason jar the idea was born out of convenience, as I would dig the scoop down in the jar for a quick perfect single portion serving. But my instagram followers began commenting on it and soon it became a signature of mine, like my fork. It is also fun for tuna or salmon salad.  I use my mini scoop to make meatballs, which is also a handy trick.
