After I got my mom hooked on parchment paper, she came up with the idea for this one dish wonder. She often makes pork for my boys when we go to her house for dinner, and pork is just not my best friend…so she started making me my own special one dish meal..which has become a new favorite of mine.
I am having fun playing around with lots of different versions…and the possibilities seem endless! So far I have tried Corvina and boneless chicken thighs…next up are meatballs!
One Dish Parchment Bake
- Preheat your oven to 425
- Start with a casserole dish sized to suit your needs and line it with parchment paper…I like the pre-cut sheets by If You Care USA. This is usually a 1 or 2 person meal for me.
- Put in either fish filets ( I love Corvina) or boneless chicken thighs.
Boneless chicken thighs are very forgiving and you can cook them a little longer without worrying about drying them out…if the veggies seem to need it.
- Slice in some veggies…I have used zucchini, yellow squash, asparagus, leeks, carrots, sliced brussels sprouts…but again, get creative and try different combinations for variety.
- Feel free to add a starchy veggie, but you don’t have to. If you do slice it thin enough that it will cook quickly. I like sweet potato or butternut squash.
- Season everything with onion powder, shallots, garlic, grated ginger…whatever you like for seasoning….get creative. Grated ginger adds really nice flavor to the juices that form at the bottom of the pan! Lemongrass would be another great addition…I have that growing on my patio….note to self: give that a try!
- Drizzle everything with olive oil.
- Bake at 425 for about 25 to 30 minutes, or until the veggies start to brown on the edges. Boneless chicken thighs should be done in 25 minutes, but you can check with a thermometer for internal temp of 165. Thinner fish filets may need less time, so pick veggies that will cook quickly if you opt for those varieties.
- When I make a single serving I like to just slide the entire thing right on to my plate! Easy peasy!
