Cauliflower Turnip Soup: Instant Pot

The other day I went to my fridge to pull the ingredients to make my weekly batch of Creamy Cauliflower Leek soup and lo and behold I was out of leeks! Not to fret. Here’s the Scoop

If you follow me on instagram (and please do) you will see my veggie mash scoops often.  Since I store leftover cauli mash in a 1.5 pint tall mason jar the idea was born out of convenience, as I would dig the scoop down in the jar for a quick perfect single portion serving. But my instagram followers began commenting on it and soon it became a signature of mine, like my fork. It is also fun for tuna or salmon salad.  I use my mini scoop to make meatballs, which is also a handy trick.
