Meyer Lemon Cubes

I love meyer lemons, but I cannot always get them year round, so when I find them, I buy a big bag and I make these handy frozen lemon cubes!

I like this silicone ice cube tray, as it makes nice 1 tsp cubes I use for single serve dressings.

I like this stainless lemon press

  • Squeeze the lemons
  • Freeze in the tray
  • Once frozen, pop them out and store them in a freezer safe mason jar (I use a pint size wide mouth mason with a plastic top).

For my single serve dressing I pop 1 cube in a small stainless single serve pitcher and cover it with olive oil and a sprinkle of sea salt.  I do this when I start my meal prep and by the time I sit down to eat the cube has melted and I give it a little stir with my fork and pour.  Voila.

These cubes are handy to add to drinks, or sauces, or marinades. So many uses!
