Tabouli Inspired Cauli Rice Salad

I love to repurpose leftovers in new and novel ways.  This quick salad is tabouli inspired.  I make single servings, but you could whip up a big batch for dinner or company.   Here I have paired it with Corvina en Papillote and some toasty Brussels (recipe here).

Tabouli Inspired Cauli Rice Salad

Place leftover Oven Baked Cauli Rice in a mixing bowl.  Drizzle generously with olive oil.  Add cubes of watermelon radish and toss in chopped fresh mint.  Sprinkle with Maldon sea salt flakes.  Toss and serve.

Tuna-Avocado Salad

Several years ago I developed an allergy to eggs.  No eggs meant no mayo and for the longest time I really missed tuna salad, which had been a regular on my plate.  I was so excited when I discovered that avocado could sub for mayo in tuna salad, and I think I even prefer it!  This tuna salad is super easy to make and makes a great travel meal.
