Mint Fennel Slaw

Mint Fennel Slaw with Aquafaba Mayo

I love to use things from my garden so I created this slaw which turned out so yummy I wanted to share it. Now I am going to admit that I don’t have exact measurements for you, as I tend to be one of those “little bit of this and that” type of cooks, but just sharing the combo for you to try.

Here is what I do.

Napa cabbage
Red cabbage
Fresh mint
Fennel
Aquafaba mayo
Onion powder
Salt, I use Redmond Real Salt

In equal parts:
Red cabbage and fennel thinly sliced using my handheld mandoline slicer.
Add another equal part of thinly sliced napa cabbage (it doesn’t slice well).
Add in leaves of a handful of fresh mint, sliced.
Sprinkle on onion powder and sea salt.
Add a big dollop of aquafaba mayo and coat the mixture. Add more if needed it is well coated.

Optional add in: Sliced or grated apple or pear.
