For a LONG time I did ZERO treats, like for YEARS of deep gut healing, but I finally found a few things I feel are ingredient worthy to include from time to time and boy am I enjoying it!

Ingredients that are:

I have to say it is like they were custom-made just for me! I have a long list of foods that don’t work for me so to find a product that fits all of my needs is no small feat! Making it taste so great that even my family that can eat almost anything gave them the thumbs up, well now that is really something!
Since I follow a lower carb template I have modified the preparation to avoid the maple syrup, instead using monkfruit which works well for me and reduces the glycemic load. I also don’t do well with coconut so I subbed in my go-to olive oil.
Here is how I prepare them.
1 bag of Eat G.A.N.G.S.T.E.R. Cookie mix
1/4 cup of olive oil
1/2 cup of water
2 tsp of Monk Zero by Smart138Foods
Mix thoroughly in a bowl. My favorite Ela’s spoon is perfect for this kind of mixing.
Use a small #40 ice cream scooper to portion them out.
If baking immediately I like to use a parchment-lined baking sheet.
I like to sprinkle the tops with Alaska Pure vanilla bean flake sea salt.
Bake as directed for 10 min at 350.
I USUALLY make the dough and then freeze it UNCOOKED in my Souper Cubes cookie trays. Then when I want to eat or serve a cookie I pull out the frozen dough, let it defrost and bake it fresh.
Prepared this way the cookies come out super CAKEY and delish!
The mix typically makes 15 cookies using a #40 cookie scooper and the Souper cube cookie trays.

My personal favorite is the Caro’Bout Fudge, which surprised me a little as I don’t think of myself as a carob fan, but they are super fudgy and delish. The Cut-Out Sugar cookie mix can be used with cookie cutters to make shapes which can be a fun project with kids or for the holidays.
The ingredients are super clean!
The Carob version contains ORGANIC tigernut flour, tapioca flour, carob powder, Grass Fed Gelatin, Vanilla powder, sea salt and baking soda.
NO idea how they make so few super clean ingredients taste so indulgently good!!
Tigernut flour has beneficial prebiotic fiber, and gelatin is part of many gut healing protocols, so win-win there!
